Harvard Beets
Ingredients:
-3 c. sliced, cooked beets
-3 T. corn starch
-1/3 c. sugar
-3/4 tsp. salt
-1 1/2 c. beet liquid or beet liquid plus water
-2 T. vinegar
-1 1/2 T. butter
Directions:
Mix cornstarch, sugar and salt. Blend in beet liquid, vinegar and butter. Cook over moderate heat, stirring constantly, until thickened. Add beets to sauce. Let stand 10 miuntes to blend flavors. Heat to serving temprature.
Easy Potato Bake
Ingredients:
-6 - 8 potatoes, grated
-1/2 c. finely chopped onion
-3 eggs, well beaten
-1 c. hot milk
-6 T. melted butter
-1 tsp. salt
Directions:
Mix ingredients and pour into a buttered baking dish. Bake at 350 degrees for 1 hour and 15 minutes.
Rutabaga Potato Whip
Ingredients:
-3 medium potatoes, peeled
-1 large rutabaga, peeled
-1 tsp. sugar
-3 T. butter
-1 tsp. salt
-1/8 tsp. pepper
Directions:
Cut potatoes and rutabagas into chunks. Cook in seperate saucepans until tender. Add sugar to rutabaga cooking water. Mash potatoes and rutabaga together. Beat in butter, salt and pepper until smooth and fluffy. Add hot milk in needed.
